I had this exact problem. I was an economics major now studying medicine. Lots of mathematics equation to solve (yes, in medical school as well). I've used both iPad Pro 11" and 12.9" to solve lots of mathematics problems. They both have their pros and cons, but if I HAD to choose one taking into account all of this, I'd choose the iPad Pro 12.9".
Otherwise, the 11' iPad Pro is the right choice. It's amazing to read, it's amazing to note taking (you will always have to zoom in and zoom out, even with the 12.9 model) and is ultra portable, super comfortable to handle and read while lying on bed or sitting on a couch. One thing to consider is how iPads can be used as a 2nd screen. 11” works in a pinch, but I bet a 12.9” would be great, especially if you do any coding w/ iPad portrait. (11” portrait code probably be fine, I just imagine the bigger one would be better) I just went from an air (basically 11inch) to the 12.9 pro.
My options are, New iPad Air M1 - $599 Apple Refurbished iPad Pro 11” (2018) - $519. The refurbished Pro comes with a new battery, new body and new display. 12.9 = mini LED Screen (similar to Pro Display XDR which costs 5000 min.. 1000 for stand) . Bigger, better screen with deeper blacks, and richer colors.. Only if you feel that it is too heavy, then you should go with 11 in that case. 12.9 is amazing, experience will also get better once ios 16 hits in October.

I used a Surface Pro 4 before switching to iPad Pro 12.9. Surface Pro is a full fledge computing device, more towards a computer than tablet. In contrast, ipad pro is more towards a tablet with 'almost there's computing device. I write alot and rely on apps, I begin to realise that ipad was a better device for me.
If you want a laptop replacement (keyboard & trackpad first) with occasional tablet use, get the 12.9". see thats my main problem is that it would be used as both, One not necessarily more then the other. If its good like the other guy said about editing then I would rather save the $300 and get the 11in and use the $300 to get a keyboard. The
12.9in ipad pro: It’s great size if you need the screen real estate. If you’re planning to use this as a laptop replacement or if you plan on multitasking a lot. Also it makes a great second screen using sidecar. But tbh I often find myself regretting upgrading to the 12.9 from the 11in.
Would suggest 11” keeping in mind the compact and easy-to-use thing. I use my 11” for my uni too. Never have been regretted for not getting 12.9”. I use my iPad for note taking, slide share and also preparing for tests. If you get Apple Pencil that’s an another benefit. The new iPadOS update allows scribble feature to which in a fan of.

Design. While the design of these M1 iPads don't differ much at all from last year's, it feels hella new to me, coming from that iPad Mini years ago. I absolutely love the size of the 11", as it feels like the perfect size for a tablet. Though the 12.9" model has that new incredible display, it's just way too big for me.
The screen is great on the Samsung and compared to the 11” iPad Pro that is still using IPS, that aspect is better on the Galaxy Tab S9. The expandable storage is also really nice to have and it would be great if Apple had that, but they don’t. The performance of the iPad is simply faster as their M2 chip is a beast in a mobile device.

If you are going to be doing a lot of typing then I would recommend the 12.9 inch model. The keyboard is a little cramped on the 11 inch. There are cheaper keyboards than the magic keyboard out there. I can't speak to the multitask experience as I am planning on getting my first Pro tomorrow and I am going to get the 12.9 inch one.
